Sinister Stew pot pie

Brewer’s Note: This is an easy to make, comforting dish that you’ll crave as the days get shorter and the nights get cooler. For this recipe we use Sinister Path Stout but you can substitute another dark beer like Schwarzbier or Comfy Chair Oatmeal Stout if that suits you better.


INGREDIENTS:

32 oz crowler Sinister Path Export Stout (16 oz for cooking)

Canola oil

2 lbs beef chuck roast, cut into 1 inch cubes

1 large onion, chopped

1 carrot, chopped

6 garlic cloves, minced

2 tablespoons flour

2 tablespoons tomato paste

1 teaspoon dried thyme

1 teaspoon yellow curry powder

1 dash Worcestershire sauce

½ cup frozen peas

Kosher salt and pepper

1 sheet frozen puff pastry

1 egg plus water for egg wash

Required Cookware: Medium sized enameled dutch oven with lid


RECIPE:

Pre-heat your oven to 325. Salt the beef and heat the dutch oven over medium high heat on the stove.  Add a few splashes of canola oil and brown the beef in batches (add oil as needed).  Set the beef aside and add the onions and carrots, sauté for five minutes or so, picking up all the brown bits.  Stir in the garlic and sauté for two more minutes.  Add the flour, tomato paste, thyme and curry powder.  Mix it all together for about one minute, then add the Worcestershire and Sinister path and bring to a simmer.

 

Once the mixture is simmering place a piece of foil over the dutch oven and put the lid on tight.  Put the dutch oven into the preheated oven.  Let it cook for 90 minutes, giving it a good stir halfway through.

After 90 minutes test the meat with a fork- it should be very tender.  If not, put it back in the oven for 15 minutes and test it again.  Once the meat is perfectly tender take the dutch oven out and remove the lid.  Stir in the frozen peas and let the stew cool down for about 30 minutes.  In the meantime, take the puff pastry out of the freezer to thaw and turn the oven up to 400. 

 

After 30 minutes, spoon the stew into your pie dish and top with the puff pastry sheet.  Mix an egg together with 2 tablespoons of water and brush it onto the surface of the pastry.  Put the pie into the oven and bake for 20 minutes or until golden brown and puffed.  Enjoy it with a pint of Sinister Path!
